Fall is one of my favourite times of year for food and drink. I love making wholesome comfort foods, cosy hot drinks and pumpkin spice EVERYTHING! However, given all the sweet treats on offer, it can be tricky to find healthy alternatives.

So in this post, I’ll be sharing 4 of my favourite healthy fall recipes that are festive, yummy and wholesome. Enjoy!

Cinnamon Apples

Ingredients

  • 1 apple, sliced
  • 1 tablespoon nut butter
  • 1/4 cup apple juice
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch

Method

  • Toss the apple and butter together on a skillet over medium heat until the melted butter is coating the apples.
  • Add the apple juice, honey and cinnamon, and let the mixture simmer for 5 minutes.
  • Add the cornstarch and toss.
  • Serve hot and enjoy!

Healthy Pumpkin Spice Latte

Ingredients

  • 4oz brewed coffee
  • 4oz coconut milk
  • 1 tablespoon pumpkin puree
  • 1/4 teaspoon pumpkin pie spice
  • whipped coconut cream

Method

  • Heat the coconut milk, pumpkin puree and spice until hot.
  • (Optional) – Pour milk into a frothing pitcher and use a milk frother to froth the mixture.
  • Pour the mixture into a mug.
  • Top with the whipped coconut cream.
  • Decorate with some of the pumpkin pie spice.

Classic Fall Vegetable Soup

Ingredients

  • 3 tablespoons olive oil
  • 4 cloves garlic, chopped
  • 1 onion, diced
  • 3 celery stalks, sliced
  • 3 carrots, sliced
  • 3 parsnips, sliced
  • 2 sweet potatoes, cubed
  • 2 bell peppers, chopped
  • 1 tin of tomatoes
  • 1 tin of kidney beans
  • 4 cups vegetable broth
  • 4 cups water
  • 3 bay leaves
  • 1 teaspoon mixed herbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme

Method

  • Heat the oil in a large pot.
  • Add the garlic, onion, celery, carrots, parsnips, potatoes and peppers and cook for 12 minutes, stirring regularly.
  • Stir in the tomatoes and kidney beans.
  • Pour in the broth, water and seasoning items.
  • Reduce the heat and simmer for 45 minutes.
  • Serve and enjoy!

Fall Granola

Ingredients

  • 2 cups oats
  • 1/2 cup applesauce
  • 1/2 cup of chopped walnuts
  • 1 tablespoon of cinnamon
  • Pinch of salt
  • 1/2 cup apples
  • 1/4 cup raw sugar
  • 1 teaspoon vanilla

Method

  • Combine all of the ingredients and mix.
  • Spread the mixture evenly on a baking sheet.
  • Cook for 45 minutes.
  • Serve and enjoy!
