Recently, I wrote a 2019 Optimal Morning Routine post, outlining the ideal steps to take for a healthy, productive morning. One of the key things to start your day with is a filling, nutritious breakfast, although it is one of the things that many people omit from their morning routine due to time constraints and other factors. So with this post, I want to give you 5 recipes for a satisfying breakfast whether you only have five minutes, or longer. Each of them are delicious, filling and healthy and will make sure to set you up for a full and successful day!
- My Go – To Breakfast Smoothie
I have this breakfast most days – it’s so quick and easy, and you can pack in so much nutrition! Vitamins, protein, calcium and a whole host of others – no wonder this is the number one breakfast choice of a nutritionist! The spinach gives it a green colour, although it’s the only green juice I’ll drink – it’s so yummy!
Ingredients:
1 ripe banana
A handful of raspberries
A few chunks of pineapple
A handful of spinach
A scoop of chocolate protein powder
A sprinkle of chia seeds
100ml of oat milk
Method:
This is my go-to breakfast as it’s so easy! Simply throw everything into a blender, whisk it up, and enjoy!
2. Peanut Butter and Banana Toast
This is a highly nutritious breakfast, as well as being super tasty and satisfying. It will feel more like a treat than a healthy breakfast!
Ingredients:
2 slices of wholemeal bread
1 ripe banana
Peanut butter
Chia seeds (optional)
Method:
- Pop the bread in the toaster until it’s toasted as you like it.
- While the bread is toasting, chop up the banana.
- Once the bread has toasted, spread a generous amount of peanut butter across the bread.
- Arrange the chopped banana over the peanut butter.
- To add more nutrition, sprinkle over some chia seeds. Enjoy!
Yoghurt and Oat Parfait
This is another wonderfully yummy yet nutritious breakfast – it’s packed full of goodness, and what I like about this one is that it could pass as a dessert! Also, because you have to leave the oats overnight, you have a satisfying breakfast to wake up to the next morning, saving you so much time!
Ingredients:
1/2 a cup of oats
A pot of natural yoghurt
A cup of any milk
Chia seeds
1/2 a cup of berries, or fruit of your choice
Desiccated coconut, cacao nibs, nuts (Decoration – optional)
Method:
- Make the oatmeal by mixing the oats with the milk and chia seeds. This can go at the bottom of your jar/container.
- Add a few berries on top to make the next layer.
- Add the yoghurt on top of the berries.
- Top with the remaining berries or fruit you like.
- Leave to set overnight.
- In the morning, decorate with any add ons you like – be creative!
Breakfast Bruschetta
The Mediterranean diet is well known for being a key to health and longevity, so bring a little Italian flair to your kitchen this morning! This dish is for people with a little more time in the morning, but it makes such a delicious and special weekend breakfast treat!
2 slices of wholemeal bread
A small amount of garlic butter
Peeled tomatoes
Chopped onion
Garlic clove
Mixed herbs
Basil to decorate
- Begin by heating the tomatoes, onion, garlic and mixed herbs on a low heat until cooked.
- Toast bread until it is to your liking.
- Spread a little garlic butter over the bread once it’s toasted.
- Once the tomato mixture is cooked, heap the mixture onto the buttered toast.
- Optionally, add some grated cheese on top.
- Decorate with basil or some mixed herbs.
Breakfast Burrito
This is a super special breakfast treat! Again, this recipe is for people who can spare 15-20 minutes in the morning, or as a fabulous weekend dish. Despite how tasty the dish is, it’s actually very nutritious and healthy, providing you use the least fatty ingredients.
Ingredients:
3 eggs
2 slices of lean bacon
Low fat cheese of your choice
2 tortillas
1 pepper
1/2 a chopped onion
Method:
- Salute the pepper and onion until soft and slightly browned.
- Reduce the temperature and break the eggs into the pan.
- Cook the mixture until the eggs are scrambled.
- Fill the tortillas with half the mixture each. Start with the egg mixture, and top with the bacon and cheese.
- Wrap the tortillas and enjoy!
